- 3 Tbsp. unsalted butter (melted and cooled, or the same amount of safflower oil)
- 2 tsp. vanilla extract
- 1/2 tsp. salt
- safflower oil (or butter for frying, the safflower oil seems to give a crispier crust, while the butter gives flavor, or use a little of both)
- 3/4 cup pure maple syrup (warmed, as an accompaniment)
- 1/3 cup blueberries fresh (or frozen, as an accompaniment)

Best pancake recipe - normal or low carb!! Taste healthy and satiating. Makes over 13 pancakes with half cup of almond and half regular flour!!
