- 5 kale leaves (stalks removes, and finely chopped)

- 1 avocado (chopped)
- 8 tortillas (small soft taco, if you want this recipe to be gluten-free, find a brand that states it is gluten-free, or you can also make your own)
- 16 oz. beans (canellini)
- 1 clove garlic (minced)
- 3 Tbsp. extra-virgin olive oil
- 1 Tbsp. white wine vinegar
- 1 pinch cilantro leaves (chopped)
- salt
- pepper
- lime juice (optional - a small squeeze of)
- 1 Tbsp. water (or so of, if you need to thin it out a little)
