Kids really liked this variation on eggs and bacon... prep wasn’t too bad and it turned out tasty! Used potatoes O’Brien in the eggs to give a little more texture and as a result reduced egg count to 4. Also used butter instead of egg wash and added cheese because we LOVE cheese! Will definitely make this one again!
