ADD AN ADDITIONAL EGG AND A 1/2 CUP FLOUR... If you don't do this, the batter will just turn to cheese once it hits the pan. Perhaps this is because I am high altitude.
I also recommend adding a little more vanilla extract and like a teaspoon of sugar for taste.
I made these on a cast-iron pan, they turned out great.

I made 20 servings. I make crepes all the time and I was thick and u cooked like a pancake. Gross. I had to redo. Don't make.
