- 2 Tbsp. grass-fed butter (or lard)

- 4 andouille sausage links (cooked and chopped)
- 1 1/2 cups red kidney beans (or 1 drained and rinsed can of)
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. onion powder
- 2 tsp. garlic powder
- 1 Tbsp. paprika (I use smoked paprika but any kind will do)
- 1/4 tsp. red pepper flakes (or cayenne pepper, or both)
- 1 tsp. oregano
- 1 tsp. thyme

I knew this was a keeper. I do things a bit different. I char the andouille sausage, let it cool slice and add to mixture. I reserve some of the water for the rice and use it to get the tasty bits off the cast iron and add to mixture(listed ingredients). I also add a tsp of basil, one bay leaf, Cajun and creole seasonings to taste. I eliminate the black pepper. I also use roasted garlic and beef bouillon to taste. Combine everything in a dutch oven type pan and bake covered at 350° until rice is tender roughly 35-40 minutes. I wash my rice prior to use and allow rice to dry for approximately 45 minutes before adding to mixture. I use jasmine long grain. Soon as I take it out of the oven I remove the lid, allow some steam to escape then stir briefly bringing the hot rice to the top, allow it to cool another few minutes serve or cover until you're ready to mangia.

Good, but needed more veggies. We added chopped carrots and celery to cook with the onions. Instead of using garlic powder, added minced garlic and sausage to sauté with the vegetables for a couple of minutes before adding the beans, rice, and spices. With the hot sausage, it was a bit spicy, but we like it that way!

Good, but I will tone down the spices next time, a little too much for me and the kids. I added chicken stock when it started to stick to the skillet.

So yummy!!!!!! I will definitely make this again. I cooked the sausage with the butter and garlic, and it was wonderful
