- 1/2 cup vegetable oil
- 3/4 cup all purpose flour
- 1 cup yellow onions (chopped)
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped celery
- 1 Tbsp. minced garlic
- 1 bay leaf
- 2 Tbsp. tomato paste
- 1/2 cup dry sherry
- 5 cups fish stock (or shrimp stock)
- 14.5 oz. diced tomatoes (with their juices)
- 1 tsp. sugar
- 2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1/2 tsp. crushed red pepper flakes
- 6 redfish fillets (each about 6 ounces, cut in 1/2 on the diagonal)
- 2 Tbsp. olive oil (as needed)
- 2 tsp. Creole seasoning (Emeril's Original Essence, or other)
- 4 Tbsp. unsalted butter
- 3 cups long-grain white rice (cooked, for servings)
- fresh parsley leaves (Chopped, or green onion for serving)
