- 1 cup all-purpose flour (plus more for work surface, for the dough, I used 1/2 cup white flour and 1/2 cup whole wheat flour)
- 1/2 tsp. coarse salt (plus more for the tomatoes)
- 1 tsp. baking powder
- 1 stick unsalted butter (chilled and cut into 1/2 inch cubes)
- 1/2 cup creme fraiche (chilled)
- 1 pt. tomatoes (a combination of heirloom cherry tomatoes and other tomatoes, cut in half or sliced if large, I used mostly regular-sized heirlooms, plus a few grape tomatoes to fill in some gaps)
- 1/3 lb. sheep’s milk cheese (semi-hard, such as manchego, again, I used sheep’s milk ricotta salata, which I wouldn’t recommend; I think a soft goat cheese would work well)
