Souperb 😉 my husband doesn’t like celery but this was a hit in our house. Going to try it with mushrooms too.

I made the mistake of using my stick blender and should have used a normal blender for a better texture. The flavour was a bit 1 dimensional, so I added a LOT of seasoning, dill to make it more creamy and lots of freshly grated nutmeg to round the flavour out more. I also added a potato with the other veg to give a more velvety texture.

This is a really easy recipe to make. I love how there is no dairy in it. The soup tastes really creamy and is very satisfying. I topped it with some fresh parsley. I will make this again.
