- 1 cup white grits (coarse stone-ground, preferably organic)
- 1/4 cup heavy cream
- 2 Tbsp. Parmigiano Reggiano (finely grated)
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 lb. mushrooms (assorted fresh exotic, such as porcini, oyster, chanterelle, lobster, and hedgehog)
- 3 Tbsp. extra virgin olive oil
- 1 garlic clove (smashed)
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup water
- 3 Tbsp. unsalted butter (cold)
- 1 1/2 Tbsp. fresh lemon juice
- 1 Tbsp. fresh flat leaf parsley (chopped, we used chives)
- 1/2 cup mascarpone (though we used crème fraîche, and just a tad)
- 2 Tbsp. Parmigiano Reggiano (finely grated)
