Simple and delicious, great to make a bit batch and save it for later. The can of coconut milk is clutch.

It turned out good but it’s not that great without the coconut milk. So, l added some after. I think that there’s too much salt. I put the thyme, coriander, bay leaf and a bit of pepper. I think l added too much garlic. Next time l will add 4 small cloves instead of huge ones. Overall, it’s a great recipe but as l said, l won’t overdo the spices next time. It’s hard work to make it so taste, before adding too much of something.

Probably the best potato leek soup I've ever made! Over 50 5 stars votes on the website and I can see why. Simple and easy recipe, I followed the directions just as written. Served with a loaf of no-knead bread and it was scrumptious.
