- 6 flour tortillas (gluten free)
- 15 oz. refried beans
- 15 oz. diced tomatoes (with juices)
- 15 oz. black beans (drained)
- 1 cup bell pepper (any color, diced - about 1 large pepper)
- 3 cups mushrooms (large diced - about an 8 oz package)
- 4 cups zucchini (large diced - about 2 medium zucchini)
- 2 sauce (pouches Simply Organic Classic Fajita Simmer)
- 2 cups cashews (ideally soaked in water for a couple hours in advance, but OK if not)
- 1 Tbsp. lemon juice (= 4 tsp)
- 2 tsp. apple cider vinegar
- 1 tsp. salt
- 2/3 cup water
- 1 Vidalia onion (sweet, thinly sliced into rings)
- 1 cup nondairy milk (unsweetened, soy, flax, almond, cashew, etc.)
- 1/2 cup flour (almond meal, NOT almond meal)
- 1/2 cup arrowroot flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup avocado oil (divided into 1/4 cup and 1/4 cup)
- sliced green onions
- sliced black olives
- chopped tomatoes
- romaine lettuce (shredded)
- cilantro
- avocado slices
- pumpkin seeds
