Easy, creamy corn casserole made from scratch with a buttery cracker-crumb topping. No one will guess it's entirely vegan!
Ingredients

- nonstick cooking spray
- 3 Tbsp. vegan buttery spread (for garlic)
- 2 cloves garlic (minced)
- 1/3 cup all-purpose flour
- 2 cups unsweetened cashew milk (plain)
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 4 cups frozen corn kernels (thawed and drained)
- 32 buttery crackers (crushed into crumbs, like Ritz)
- 3 Tbsp. vegan buttery spread (melted, for topping)

Directions
- Preheat the oven to 375°F.
- Spray a 9-inch square baking dish with nonstick cooking spray. Set aside.
- Set a large pot over medium-high heat and add the buttery spread. Once melted, add the garlic. Saute just until fragrant, about 30 seconds.
