- 2 leeks (large, root and tough dark green tops removed, cleaned and medium chopped)
- 2 stalks celery (cleaned and medium chopped)

- 1 head cauliflower (cleaned, green stem & leaves removed and cut into 2 inch florets)
- 1 qt. vegetable stock (or low sodium chicken stock if preferred*)
- 3 cups water (purified, or more stock, more or less as needed)
- 1 bay leaf
- 1 1/2 tsp. red wine vinegar
- 1 Tbsp. fine sea salt (more or less to taste)
- 1 tsp. black pepper (coarse, more or less to taste)
- chives (finely chopped, for garnish, optional)
