- 1,250 grams PHILADELPHIA Cream Cheese (5 x 250g blocks, brought to room temperature)
- 2 Tbsp. vanilla bean paste (or extract)
- 1 1/4 cups raw sugar
- 5 eggs (+ 3 egg yolks, room temperature)
- 1 cup sour cream
- 300 mL whipping cream
- 100 mL sour cream
- 1 Tbsp. raw sugar
- 1 tsp. vanilla paste (or extract)
- 3 Tbsp. Cointreau (optional OR orange zest)
- 100 grams white chocolate (roughly chopped into shards)
- orange zest
- fresh fruit (your choice - I've used the following:)
- 1 fresh mango (finely sliced)
- 1 fresh raspberries (punnet)
- 4 passionfruit (fresh, or 4 tbs of passionfruit syrup)
- fresh mint leaves
