- 6 bone-in, skin-on chicken thighs (about 2 packages)
- olive oil
- salt
- cracked black pepper
- 1 shallot (large, peeled and minced)
- 3 cloves garlic (minced)
- 1/4 cup marsala wine (or any dry white wine)
- 1/4 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup sun dried tomatoes (chopped, jarred, in olive oil)
- 1/2 cup shredded Parmesan cheese (good)
- 2 cups fresh spinach (rough chopped)
- 1/2 cup cherry tomatoes (chopped, or any good red tomatos)
- parsley (or fresh thyme for garnish, optional)

I’m lactose intolerant so I used Lactaid milk mixed with a teaspoon of corn starch and vegan cheese. It worked great. I think this will be my go to when we have guests. I’ll pre-cook the thighs and make the sauce when they’re here. I forgot to take a pic prior to eating. It was ah-mazing.

This recipe was delicious! Even my husband commented. I did have to change a few ingredients as I didn’t have everything in the house. I added mushrooms and switched out shallots with red onion very thinly cut. I also added a bit of flour to thicken the sauce. Turned out very good!

This was great! Spot on with the thighs. I had a few fresh mushrooms and artichoke hearts leftover from another recipe, I tossed in there and I used the suggestion of cutting calories and used more chicken broth. This recipe was perfect for a cold drizzly evening… thanks!!

The sauce was not thick. The recipe indicates as such. However, it does an adequate job covering the noodles I served it with. Overall, it was a family pleaser.

The dish was very good and it took less than an hour. A major victory for me. Lol . I added additional seasoning to the meat, loaded up on the spinach, and added red pepper in the sauce to heat it up a bit. I also boiled some angel hair pasta and the dish was a win. I will definitely make again.

Delicious. Double the recipe if making a whole box of fettuccine and added pasta.

In a word....awesome.
I only had two exceptions. I used boneless skinless thighs and I added roasted red peppers to compliment the sundried tomatoes. I may fry some pancetta next time but not necessary.
This is a lovely recipe. Thank you. EDIT Nov 2023 - have made this several times since. Crowd favourite. Last couple times I held it at warm to a slight bubble for about 1.5 hours. Using the boneless skinless and holding it once done allows the thighs to break up. Next level awesome.

Fantastic! Flavorful, but not too salty or rich. Prep was uncomplicated and directions were easy to follow. I didn’t have white wine or fresh tomatoes, so I used sherry and canned tomatoes. I also added some green olives and chopped oyster mushrooms. Yum! I ate it with sourdough bread, but my husband follows a keto diet and was satisfied eating it on top of asparagus.

this was great. essier than it looks.
omitted wine and subbed shredded mozarella for parm (what i had on hand).
used canned diced tomatoes in place of sun dried and onions in place of shallots.
last sub was frozen spinach.
served over brown rice with side of biscuits

Really delicious! Didn’t find Marsala so subbed it with dry sherry, also added mushrooms and served with penne pasta. Will make this again!

Excellent! I paired this meal with a nice Chianti. I added mushrooms to the sauce and served it over mashed potatoes.

it was delicious The saucewas nice and creamy and I had plenty of sauce I haven’t pan cooked chicken in awhile and it made quite a mess but was well worth it I will I will definitely make it again
