- 1/2 cup unsalted butter
- 1 onion (medium, chopped)
- 2 celery stalks (chopped)
- 2 carrots (sliced into 1/4” thick coins)
- 8 oz. button mushrooms (fresh, sliced)
- 2 garlic cloves (minced)
- 1/2 cup all purpose flour
- 8 cups low sodium chicken broth
- 2 cups half-and-half
- 2 Tbsp. soy sauce
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 bay leaf
- 1 tsp. chopped fresh thyme (finely, or 1/2 tsp. dried)
- 1/4 cup finely chopped fresh parsley (or 2 tsp. dried)
- 4 cups turkey (cooked and coarsely shredded, or chicken)
- 2 tsp. fresh lemon juice

It was very good, I substituted black rice instead of the noodles, real creamy not to thick and not much left over .
I will make this again and try chicken!
