  • 2 tablespoons butter
  • 1 cup sweet onion (chopped, or leek, or yellow onion, I've done it with all 3)
  • 1 1/2 teaspoons flour
  • 1 quart crushed tomatoes
  • 1 quart stock (you could use beef, chicken or turkey, or vegetable)
  • 2 tablespoons prepared pesto (here's how I put up mine)
  • 2 tablespoons tomato paste (Alanna shares a simple tip for the rest of the can)
  • 2 cloves roasted garlic (here's how I roast and store my crop or fresh garlic or dried, I'm easy)
  • 1 piece Parmesan (rind, ask your fancy cheese counter to sell ya some cheap)
  • 3/4 teaspoon salt (I used kosher)
  • 1/2 teaspoon pepper
  • 6 ounces evaporated milk (by volume)

    This was a really good tomato soup recipe. I followed the guidelines using a 28 oz can and pesto from a bottle and a slice of Parmesan that got blended in with the soup. I wouldn’t change a thing. I only cooked it for about 30 minutes and it was great. From start to finish was 45 minutes. With grilled cheese made while the soup simmered, it was a quick easy dinner. I will try it this summer if the tomato crop is good and probably like it even more.
