This was a really good base to work with. I didn't have any coconut milk so I used shaved unsweetened coconut slices instead and that gave it a coconut flavor without the heavy consistency coconut milk would have added. I made this with bok choy, butternut squash, and shiitake mushrooms. Delicious!
