- 2 Tbsp. tapioca flour (or all purpose or plain flour/s)
- 2 Tbsp. fresh Parmesan cheese (finely grated, do not include for dairy free option)
- 1 tsp. salt
- cracked pepper
- 2 Tbsp. oil (reserved sun dried tomato, or olive oil)
- 2 Tbsp. minced garlic
- 7 oz. sun dried tomato (200 g, jarred, strips in oil, drained (reserve 2 tablespoons of oil for cooking))
- 1 cup sliced mushrooms (250 g | 8 oz)
- 1 1/2 cups evaporated milk ((reduced fat or full fat milk)*)
- 1 Tbsp. cornstarch (cornflour mixed with 2 tablespoons of milk**)
- 1/3 cup grated Parmesan cheese (fresh, do not include for dairy free option)
- 2 tsp. Italian herbs (optional for added flavour)
- 2 Tbsp. shredded basil (fresh, to serve)
