Delicious. Paired with home made tater tots. Used orange and golden sweet potatoes and hefty handfuls of spinach and basil. Shockingly good.

The sauce is a great base and can be used with other recipes.. there will be leftovers. Basil was good, I’ve also used sage before. I’ve used the leftover sauce with my pesto gnocchi to make it a little creamy.
I make this at least once or twice a month!

my family liked it but personally i thought it needed more flavor so i went off the recipe a bit. if i made it exactly how the recipe told me, it would’ve been too bland

Delicious! And surprisingly easy. you dont actually need to soak the cashews for two hours.

This tasted good, I just wasn't crazy about he texture. Perhaps I didn't cook potatoes long enough.

It was alright but not as great as everyone raved I put three garlic cloves maybe too much?? missing mushrooms and onions to put on top with parmesan cheese as well I think steaming the sweet potatoes first and then frying them

Sweet potato noodles (3mm spiralizer) were not cooked enough after 6-7 min. I cooked them longer, but next time I will add water to the pan to steam them more and prevent them from burning on the bottom. The spinach is key and add more than you think you should.

It was absolutely amazing. The cashew sauce was so creamy rich ! The sweet potato noodles tasted exactly like pasta. I’ll be making this over and over again .

I used kale instead of spinach & used fresh thyme for the herbs because it’s all I had. I would have opted for fresh rosemary if I’d had it. But, honestly, I’m glad I didn’t because this way turned out surprisingly delicious! Even my boys (3, 5, & 7) kept saying “This is soooooo yummy!” With cashew cream & “sweet noodles” this couldn’t get any better. Thank you for this recipe idea!

I added some sauteed sweet onion, bell pepper and broccoli. Amazing! The sauce is incredibly easy and delicious. Will definitely make again

It was tastefull. I found it a bit hard to get tw potatoes crispy. I soaked the Cashew nuts for only 20min and they turned out fine.

Great! The sweet potato blends in perfectly and gives the dish great flavor to go along with any spices added.

I added mushrooms with the sweet potatoes and threw in nutritional yeast and oat milk to the sauce. It was a great and simple recipe. Will make again.

rating this low because my spiralizer didn’t work on the sweet potato and nothing came out right, cashew sauce is super good tho and would definitely make again

Added an extra clove of garlic, cayenne pepper, and cilantro to the sauce... so good! Also loved the flavor and texture of the sweet potato noodles (spoodles, anyone??). I did cheat and buy the sweet potatoes already spiralized. Bought two pounds for four servings (they cook down quite a bit, but I did do two separate batches). Will make again.

It is delicious!! I added 1 Tablespoon Cheyenne pepper to the sauce to add a bit of a kick! The 4 potatoes is not enough! Lol... the recipe definitely needs more spinach! I love it!

it was delish.... the sauce was the bomb. Next time i will add more spinach. Substituted cilantro no fresh basil on hand added dried basil. Definitely will fix again, quick n easy.
