    I used kale instead of spinach & used fresh thyme for the herbs because it’s all I had. I would have opted for fresh rosemary if I’d had it. But, honestly, I’m glad I didn’t because this way turned out surprisingly delicious! Even my boys (3, 5, & 7) kept saying “This is soooooo yummy!” With cashew cream & “sweet noodles” this couldn’t get any better. Thank you for this recipe idea!

    I added some sauteed sweet onion, bell pepper and broccoli. Amazing! The sauce is incredibly easy and delicious. Will definitely make again

    It was tastefull. I found it a bit hard to get tw potatoes crispy. I soaked the Cashew nuts for only 20min and they turned out fine.

    I’ve made this countless times. My husband is lactose intolerant and can rarely enjoy pasta. This is the one dish he constantly asks me to make for dinner. I use normal noodles instead of sweet potatoes and I add chicken and bacon to the mix. It’s delicious!

    Simple and tasty! Mine turned out mushy, but I truly didn't care, because it tasted so good. I served it on a bed of quinoa - yum!

    I added mushrooms with the sweet potatoes and threw in nutritional yeast and oat milk to the sauce. It was a great and simple recipe. Will make again.

    rating this low because my spiralizer didn’t work on the sweet potato and nothing came out right, cashew sauce is super good tho and would definitely make again

    This recipe is way too much work for the result. I also think it needs more protein or solids to balance the mushy. Good flavor.

    Added an extra clove of garlic, cayenne pepper, and cilantro to the sauce... so good! Also loved the flavor and texture of the sweet potato noodles (spoodles, anyone??). I did cheat and buy the sweet potatoes already spiralized. Bought two pounds for four servings (they cook down quite a bit, but I did do two separate batches). Will make again.

    It is delicious!! I added 1 Tablespoon Cheyenne pepper to the sauce to add a bit of a kick! The 4 potatoes is not enough! Lol... the recipe definitely needs more spinach! I love it!

    it was delish.... the sauce was the bomb. Next time i will add more spinach. Substituted cilantro no fresh basil on hand added dried basil. Definitely will fix again, quick n easy.

    Awesome I added scallions, mushrooms and sweet peppers to the spiraled sweet potatoes .Also added cayenne pepper to the cashew sauce. Crazy Good! My wife loved it😇

    I made half a recipe. It had good flavor but there was not enough sauce. It was actually dry without any visible sauce. So if you make a half recipe, make a full recipe of the sauce.

    4 large sweet potatoes makes a lot! We baked the sweet potatoes on a jelly pan in the oven @350 for 30 minutes. Doubled the sauce to match the quantity of noodles. Added sautéd veggies on top. Took a little longer to make than 2 hours.

    It was good. I added more greens. my husband didnt hate it and my son had seconds, so that was bonus I have some leftover sauce.
