- 2 Tbsp. butter
- 1 cup carrot (chopped)
- 1 cup chopped onion
- 1 cup green onion (chopped)
- 1 tsp. fresh rosemary (chopped)
- 1/2 tsp. freshly ground black pepper
- 3 cloves minced garlic
- 2 qt. turkey stock (or 2 qts. chicken stock)
- 2 Tbsp. turkey drippings (brined smoked, if you don't have them....you don't....and it will be fine)
- 1 1/2 cups smoked turkey (chopped, dark or light: whatever color you prefer)
- 1 cup wild rice (uncooked)
- 1/3 cup flour
- 2 3/4 cups milk (we made about 1 c. of that milk Half & Half, because we like a richer soup)
- 2 Tbsp. bourbon (or sherry)
- 1/2 tsp. salt (or to taste)

Followed this exactly! It was delicious! After buying 0.19 per pound turkey the day after Thanksgiving, my husband smoked it and we froze the meat.

Great recipe ( love the bourbon flavoring @ the end ) Substituted Navy Beans & New Potatoes for the Wild Rice and added celery, portabella Shrooms & Turnip Greens as family favs in soups This will be a crowd pleaser at a Holiday soup party tomorrow evening!
