- 8 slices bacon (cooked and chopped)
- 1 bulb garlic (about 10 cloves)
- 1 tsp. olive oil (extra to garnish)
- 1 Tbsp. butter
- 1 small yellow onion (diced)
- 2 celery stalks (small, sliced)
- 14 oz. mixed mushrooms (see blog post for suggestions, cleaned and chopped)
- 2 Tbsp. chopped flat leaf parsley (extra for garnish)
- 1 Tbsp. chopped fresh thyme (or 1 teaspoon dried thyme leaves)
- 1 tsp. sea salt (more to taste, this is the only salt I use)
- 1/2 tsp. ground black pepper (more to taste)
- 4 1/4 cups chicken stock (I use this brand)
- 1/3 cup heavy cream
