- 2 red onions (peeled and cut into 8 wedges each)
- 5 sprigs fresh thyme
- 2 Tbsp. olive oil (divide use, more if needed)
- 1 pinch salt
- 1/2 butternut squash (half a small-ish, peeled and sliced into wedges approx 1cm thick)
- 50 grams pine nuts
- 300 grams pasta shapes (dried, wheat or gluten-free, I used casarecce from Gustalia. It comes as gluten-free too)
- 1 jar cream (grangusto pumpkin, or the other half of the squash – steamed, pureed and seasoned)
- 100 grams chorizo (vegan, chopped and cooked as directed)
- fennel seeds (fresh, optional garnish)
