- 1 lb. chicken sausage (sliced, I use the big rope kind you have to slice yourself.)
- oil (for cooking, I used coconut oil but you can use what you like)
- 1 bag fresh spinach
- 2/3 cup chicken broth
- 3/4 penne pasta (a box, 16 ounce size, cooked, you can use the whole box, but you will want to increase your sauce a bit.)
- 2/3 cup heavy cream
- 1/2 cup grated Parmesan cheese (+ more to sprinkle on top)
- dried oregano (for sprinkling)

Was very tasty and super quick! Will definitely make again! I did do a full pound of penne, and a full cup each of cream and chicken broth, but we loved it!

I doubled the sauce, used 12 oz of penne, used Trader Joe’s Sweet Italian and Basil/Tomato chicken sausage. Served with salad, bread, and cantaloupe.

Good recipe, I cooked too much pasta because I wasn’t paying attention, slowly added more broth, and cream to balance the sauce to pasta ratio, worked great. Good recipe to hide the spinach taste so my son ate it.
