  • 8 slices bacon (coarsely chopped)
  • 2/3 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/4 cup flat leaf parsley (chopped)

    Directions

    1. Cook potatoes in boiling salted water for 15 mins until tender. Drain. Cook the bacon until crisp. Drain on paper towels; break into pieces.
    2. Bring the cream to a simmer in a medium saucepan. Add the Parmesan cheese; stir until melted and the sauce is smooth.
    3. Add the potatoes, bacon and parsley; stir well. Season with salt and freshly ground black pepper.
