- 2 cups skim milk

- 1 1/2 tsp. dried basil
- 1/4 tsp. crushed red pepper flakes
- 1 Tbsp. freshly squeezed lemon juice
- 2 tsp. lemon zest
- 2 cups fresh spinach (loose, not packed)
- 1.5 oz. Parmesan cheese (freshly grated)
