Noodles in an instant pot turn out pretty soft, so be ready for that. I used the only cheeses I had around, a mix of pre-shredded Colby jack, some cut up pre-sliced cheddar and cut up pre-sliced Muenster- in all about 3 cups. It turned out so well that I’m making it again at my son’s request for his birthday dinner! It is SO EASY, this recipe is a game changer for this busy working single mom.
