Description
This easy, one-bowl corn and rice casserole is naturally gluten-free and makes a great weeknight main dish.
Ingredients

- nonstick cooking spray
- 4 cups cooked rice
- 3 cups cooked chicken (diced or shredded)
- 1 can sweet corn kernels (drained, 15 oz. per can)
- 1 can creamed corn (15 oz. per can)
- 2 scallions (large, minced)
- 1 can evaporated milk (12 oz. per can)
- 1 cup sour cream
- 1 tsp. salt (plus more to taste)
- 1/4 tsp. black pepper
- 1 1/2 tsp. garlic powder
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese (for casserole)
- 1 cup shredded cheddar cheese (for topping, plus more if desired)

Directions
- Preheat the oven to 350°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Place the rice, chicken, corn, creamed corn, scallions, evaporated milk, sour cream, salt, black pepper, garlic powder, Parmesan cheese, and cheddar cheese in a large mixing bowl. Stir the ingredients with a wooden spoon until everything is well combined.

This was so bland. We didn't even finish our servings and composted the reset.

this was perfect for the whole family. even my picky eaters liked it. super easy to make if you have everythingprepped aheadof time. I used the pre cooked rotisserie chicken from Costcoand precooked jasmine rice.

I have made this dish several times lately. It's not a super quick dish, but I love that there's enough for another night of left overs. I like to use 4 cups of shredded chicken, and follow the rest of the recipe.

Loved this. It pleased the teens in the house as well. Pretty easy to make. And one you could add to if you wanted.

Delicious, simple to make, and does indeed provide 10 servings. It's dull-looking though, pretty much all one color. Next time I'll add one or two colorful ingredients - maybe diced carrot or red pepper, or peas.
