- 1 1/2 lb. skinless boneless chicken breasts
- 1 tsp. kosher salt
- 1/8 tsp. freshly ground black pepper
- 1 Tbsp. extra-virgin olive oil
- 3 Tbsp. extra-virgin olive oil
- 3 large carrots (peeled and chopped fine)
- 2 stalks celery (chopped fine)
- 1 yellow onion (medium, peeled and chopped)
- 1/2 tsp. kosher salt
- 1/8 tsp. freshly ground black pepper
- 2 Tbsp. unsalted butter
- 1/4 cup gluten free flour blend (basic gum-free, 23 g superfine white rice flour + 8 g potato starch + 4 g tapioca starch/flour)
- 4 cups chicken stock
- 3/4 cup milk (any kind, just not nonfat)
- 4 sprigs fresh thyme (or 2 teaspoon dried thyme)
- 1 3/4 cups all purpose gluten free flour (I used Better Batter)
- 1/4 cup cornstarch (or try potato starch or arrowroot, but if using a higher starch all purpose flour like Cup4Cup, replace with more flour 1:1)
- 4 tsp. baking powder
- 1/2 tsp. kosher salt
- 2 eggs (100 g, weighed out of shell at room temperature, beaten)
- 3/4 cup milk (any kind, just not nonfat, at room temperature)
