DELICIOUS! I used a 4 cheese blend (asiago/parm/fontina/romano) and it was fantastic! DON'T saute/cook the spinach ahead of time (aka follow the directions haha). Will definitely make again!

I used grated parm instead and added a handful of chopped fresh basil. delish!!

I"m new to farro but the rissoto process I know. Very good taste and texture.
