Ingredients

- 3/4 cup brown rice
- 1 Tbsp. olive oil
- 1/2 cup yellow onion (diced)
- 2 garlic cloves (minced)
- 1 1/2 cups mushrooms (sliced)
- 1 tsp. chili powder
- 1 tsp. marjoram
- 4 cups corn kernels (fresh or frozen)
- 1 cup frozen peas (shelled, fresh or frozen)
- 3/4 cup rice milk
- 1 cup vegan sour cream (I use the Follow Your Heart brand)
- 1 cup non-dairy cheese (Daiya, shreds, I used a combination of mozzarella and cheddar flavors, but any will work)
- 1 tsp. salt
- freshly ground pepper (to taste)
- 2 tsp. Earth Balance Buttery Spread (I use the Earth Balance Soy Free style)
- 2 cups breadcrumbs (I use panko breadcrumbs, but another style will work)
- 1/4 fresh parsley (chopped)
- 1 pinch salt
- cooking spray (or oil to prepare casserole dish)
