  • 1 tablespoon olive oil
  • 1/2 cup yellow onion (diced)
  • 2 garlic cloves (minced)
  • 1 1/2 cups mushrooms (sliced)
  • 1 teaspoon chili powder
  • 1 teaspoon marjoram
  • 4 cups corn kernels (fresh or frozen)
  • 1 cup frozen peas (shelled, fresh or frozen)
  • 3/4 cup rice milk
  • 1 cup vegan sour cream (I use the Follow Your Heart brand)
  • 1 cup non-dairy cheese (Daiya, shreds, I used a combination of mozzarella and cheddar flavors, but any will work)
  • 1 teaspoon salt
  • freshly ground pepper (to taste)
  • 2 teaspoons Earth Balance Buttery Spread (I use the Earth Balance Soy Free style)
  • 2 cups breadcrumbs (I use panko breadcrumbs, but another style will work)
  • 1/4 fresh parsley (chopped)
  • 1 pinch salt
