- 2 Tbsp. Garam Masala
- 1 tsp. paprika
- 1 Tbsp. lemon juice
- 1 tsp. hot sauce (or to taste - I used sambal oelek)
- 1/2 tsp. salt (or to taste)
- 1/2 tsp. black pepper
- 2 tsp. granulated sugar (vegan, optional, just if you feel like the tartness needs balancing)
- 3 cups cauliflower florets (about 1/2 large crown)
- 14 oz. chickpeas (rinsed and drained)
- 1/2 cup zucchini (chopped, about 1/2 medium zucchini)
- 1 cup frozen peas (thawed)
- 1/4 cup salted cashews (roasted and)
- 1/4 cup chopped fresh cilantro

I used light coconut milk because that's all I had. Ended up being more like a soup than a stew for this reason. I also had to cook a little longer because I prefer cauliflower to be really soft. It was delicious.
