- 1 onion (diced)
- 1 red bell pepper (chopped)
- 2 jalapenos (seeds removed and chopped)
- 3 medium carrots (peeled and chopped)
- 3 cloves garlic (peeled and chopped)
- 2 cans chickpeas (or 3 cups, rinsed and drained, I use homemade crockpot chickpeas)
- 4 potatoes (medium white, Russet potatoes are best, about 4″ long, peeled and chopped)
- 1/4 tsp. dried rosemary (crushed)
- 1/2 tsp. dried thyme
- 1 tsp. dried tarragon
- 3 bay leaves
- 1/2 tsp. turmeric
- 1 Tbsp. dried parsley
- 1 tsp. sea salt
- 1 Tbsp. olive oil
- 3 cups low sodium vegetable stock
- 3 cups water
- 1/4 cup maple syrup (or coconut sugar)
