I did not have leftovers so i baked my spaghetti squash on 400 for 45 minutes then cooked my chicken thighs off in a little bacon fat then set the thighs aside and added the garlic and fresh spinach to the pan and got all the brown bits up. After a minute i added the shredded spaghetti squash and when it was all hot, added about 6 ounces of garlic and herb cream cheese. i sliced the chicken thighs and plated them over the creamed squash and spinach. this was so flavorful in a soul food kind of way. There are so many flavor combinations that you could exchange according to what you have on hand. This was a major hit and we will most definitely be making this one again!

Great! Unfortunately I didn’t read the recipe in advance to know that it started with left over chicken and squash which were already prepared. I ended up adding some fresh ground nutmeg which was nice.

I added a little garlic salt. But so good!!! My family loved it. So easy to make too

Excellent and very easy to make. Used fresh spinach and steamed it. Will definitely make again

It was delicious! I didn’t have bacon grease so I cut up 4 slices of bacon and cooked that but left it in the pan. Also used fresh spinach. I will definitely make this again.
