- 3 brown onions (peeled and finely diced)
- 5 cloves garlic (peeled and minced)

- 1/2 tsp. celery salt (optional)
- 1 liter chicken stock
- 300 mL milk
- 2 Tbsp. lemon juice (freshly squeezed)
- 20 chestnut mushrooms (thickly sliced, white mushrooms or baby portabella are good too)
- 240 mL cream (double, heavy)
- 3 Tbsp. cornflour (/cornstarch mixed with 5 tbsp cold water – to make a slurry, optional)
- 1 bunch parsley (chopped)
