- 1 yellow onion (sweet, diced)
- 4 cups chicken stock (or broth, or a combo - low salt or unsalted)
- 3 1/2 cups milk (or cream or half & half, i use a combination of skim milk and cream)
- 2 Tbsp. chicken base (granules)
- 1 tsp. cracked pepper (fresh)
- 1 Tbsp. dried parsley (or 2 T fresh parsley)
- 3 bay leaves
- 1 1/2 tsp. herbs (Provence)
- 1/2 tsp. turmeric (optional)
- 1/4 tsp. garlic powder (or 1 t. chopped garlic, i use garlic from a jar)
- 3 cups rotisserie chicken (cubed or shredded and cooked)
- 1/4 cup white wine (your favorite)
- shredded Gruyere cheese (to sprinkle on top after spooning soup into bowls)

This soup is so delicious! It’s become a staple in our house. It’s been a great way to use up leftover turkey after holiday dinners, as well. Everyone loves it!!

This is like chicken pot pie without the pie. Next time I would add some peas right at the end for some brightness and to make it feel lighter. It is a tad heavy. Would be perfect on a cold winter day. I didn't have herbes de provence, so I substituted a combination of thyme, bay leaf, mint, and tarragon. I think it was close to the original, but I would like to try making it again with the real herb mix and maybe a flaky puff pastry dipper.
