- 3 chicken breasts (cut into small chunks)
- 3 carrots (peeled and chopped into chunks)
- 3 potatoes (medium sized, peeled and chopped into small chunks)
- 1 pinch salt (and pepper)
- 2 sprigs thyme (or 1 tsp dried thyme)
- 850 mL chicken stock (water plus 3 stock cubes is fine)
- 50 grams butter
- 1 onion (large, peeled and finely chopped)
- all purpose flour (50g/1.75oz/6tbsp plain)
- 300 mL milk (half or full fat)
- 1 lemon
- 1 egg (slightly whisked with a fork)

Made this yesterday. Didn't use onions because I have an allergy. Still absolutely delicious. Very easy to prepare and cooking time is fast also.

Absolutely gorgeous. Made a small pie and kept the extra filling and put in the freezer for a next one.

It was very nice; quite mild in flavour. I may have preferred a teaspoon of Dijon or whole grain mustard instead of the lemon juice. A good recipe to use as a base and to improvise based on what you have in the house.
