- 1 cup chopped onion
- 1 1/2 cups sliced leeks (white and light green parts only)
- 5 cups chopped celery (for the soup)
- 1 1/2 cups diced celery (for the topping, from one large bunch of celery or two small bunches)
- 2 cloves garlic (minced)
- 2 bay leaves
- 4 cups chicken stock
- 1 1/2 tsp. salt (to taste)
- 1/3 cup cream
- freshly ground black pepper (to taste)
- chives (Fresh chopped, or parsley for garnish, optional)

This was a hit. I didn't have any leeks on hand, so increased the onion. I added celery leaves, some paprika, some thyme, and a little cayenne. Did thicken it slightly as well. Next time will add flour to the vegetables before adding the stock.

Recipe involves a bit of chopping; onion, leek and generous amount of celery but it is very easy to make. It turned out ok but it doesn't make my "personal favourite list" of soups and I make a lot of soups and also really like celery. I think it was a bit a bit "onion and leek heavy" - if you like nutmeg you could add a tiny little bit, I liked it but you have to be careful otherwise it will be too overpowering. You can also chop up a few of the celery leaves and add that with the parsley.
