- 2 Tbsp. bacon fat (reserved from cooking process)
- 2 Tbsp. butter
- 1 head cauliflower (broken into small florets, no larger than 1 inch)
- 1/2 cup orange bell pepper (or yellow, diced)
- 1 cup leeks (finely chopped, divided- just the white & light green part of the leek, can substitute green onions)
- 1/2 cup yellow onion (diced)
- 1/2 cup celery (diced)
- 3 cloves garlic (finely chopped)
- 1 tsp. thyme (finely minced)
- 1/8 tsp. cracked pepper
- 1/8 tsp. cayenne
- 1/2 tsp. salt
- 4 cups chicken broth (1 quart)
- 1/2 cup cream cheese (block, 4 oz., softened at room temp)
- 1/2 cup heavy whipping cream
- 1 cup cheddar cheese (shredded, divided)
- 1/2 tsp. xanthan gum (optional for thickening)

This is absolutely amazing! I had my doubts, but it turned out so delicious! I omitted the celery, because I didn’t have any, LOL! And I waited to add the garlic and thyme until after the onion, leeks, and orange pepper were softened. Just a lesson I learned from cooking school, the garlic and thyme only need about 30 seconds, until they are just fragrant. I believe I must’ve had an extra large cauliflower head, because the chicken broth wouldn’t cover it. I added two more cups of chicken broth and it didn’t change anything except for the consistency. A little extra xanthan gum got it to a chowder like consistency.
