- 1/4 cup chicken broth (I use low sodium)
- 1/4 cup milk
- 2 tsp. minced garlic
- 1 lb. whole wheat penne pasta ( uncooked, or any shape/variety)
- 2 cups kale (roughly chopped with stems discarded, optional)
- 1/4 cup plain greek yogurt
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1/2 cup shredded cheese (I like gruyère or white cheddar3)
- 1/3 cup whole wheat breadcrumbs (optional)
- fresh parsley (optional: chopped, for garnish)
