- 3 1/3 cups cooked quinoa (cook 1 1/2 cups uncooked quinoa to packages instructions, I used red quinoa)
- 2 cups low sodium chicken broth (or stock)
- 2 heads broccoli (cut into small florets)
- 4 Tbsp. butter (1 stick)
- 3/4 lb. cremini mushrooms (thinly sliced)
- 1/2 medium onion (thinly sliced)
- 2 carrots (peeled and sliced)
- 2 stalks celery (finely chopped)
- 1/4 cup all purpose flour (or rice flour)
- 1/2 cup heavy cream
- 1 tsp. salt (or more to taste)
- 1 tsp. black pepper (or more to taste)
- 1 cup panko breadcrumbs (or your choice of breadcrumbs)
- 2 Tbsp. fresh parsley (minced, for garnish optional)

Tasty! Adjusted quantities for 6 servings. Ended up with not quite enough broth (stock and cream) so made a quick batch (1 cup and 1/4 cup, respectively) and glad I did. Will make again!
