- 6 pork loin chops (lean, trimmed of excess fat, about 1 1/2 pounds)

- 2 cups sliced mushrooms
- 1 white onion (large, cut in half and cut into 1/4″ slices)
- 2 cloves garlic (minced)
- 2 cups low fat milk
- 3 oz. low fat cream cheese
- 1 tsp. kosher salt
- 2 Tbsp. all-purpose flour
- 1/2 tsp. coarsely ground black pepper
- 1 Tbsp. butter
- 1 Tbsp. olive oil
- 5 oz. brie cheese (trimmed of the rind, don’t kill yourself getting it off, but you want most of the rind gone and cut into 1/2″ cubes)
