- 4 cups zucchini (roughly chopped)
- 1 cup vegetable broth
- 1/8 tsp. white pepper

- 2 cups zucchini (cubed into bite sized pieces)

- 15 oz. white cannellini beans
- 1 cup pumpkin seeds (green, shelled, and also known as pepitas)
- 1 cup flour (all-purpose)
- 1/2 cup Parmesan cheese (grated)
- 1/2 tsp. Morton Kosher Salt
- 1/4 tsp. white pepper
- 1 1/2 Tbsp. sage (diced)
- 7 Tbsp. unsalted butter (cold and cut into cubes)
- 4 Tbsp. ice cold water
- 1 sweet potato (sliced thinly I used the 1/8th-inch setting on my mandolin.)
