- 2 lb. cremini (or button mushrooms, cleaned, roughly chopped or sliced 1/8-inch thick)
- 1 handful shiitake mushrooms (chopped)
- 3/4 cup shallots (minced, 6 ounces, 170 g)
- 3 cloves garlic (minced, 3 teaspoons)
- 1 tsp. kosher salt
- 3/4 tsp. dried tarragon
- 4 cups chicken stock (or vegetable stock for vegetarian option)
- 1/2 cup heavy cream
- 1/2 tsp. freshly ground black pepper (more or less to taste)

Easy to make but I would reserve more mushrooms I needed up sautéing more mushrooms to add and added more seasonings

I added a vadelia onion, instead of shallots; and garlic powder over garlic (only because I was out). Delicious—

It was great unfortunately I used to much salt which I will have to adjust next time. Not the recipe´s fault but my own.

I had to substitute tarragon for thyme and used brown and Portobello mushrooms, and the soup still turned out great! Might do a big batch next time to reheat for dinners.

Turned out nice and thick— you’re going to want to put in easily twice the amount of salt stated, though, and I’d go for maybe 4 cloves of garlic. We couldn’t find tarragon, sadly, but 3/4 tsp of thyme and a 1/4 tsp of rosemary worked as well, if not in the same way.

i added oyster mushrooms and chillu flakes for a bit extra, and used coconut cream to make it vegan - an absolute hit in my house! Creamy, and flavoursome

I’ve made this recipe with vegetable soup and without butter, and it turned very very good!!! Delicious 🤤. I will do it again tomorrow 😄

I also made it with chicken stock, white wine, thyme, yellow onions and used only cremini mushrooms and 10% cream and it still turned out tasty. Very smooth and creamy. I like a recipe that can be as versatile as this one is, using ingredients you already have on-hand. This one is a keeper in my rota of soup recipes.

Excellent recipe, soup is incredibly tasty and so easy to make !!! I substituted terrago for fresh thymian and it turned out amazing !!

This soup is a winner. Savory and creamy, everyone loves it when I make it. It’s easy enough to make for a fast and simple weeknight meal, yet elegant and tasty enough for a multi-course dinner party. Perfect as is.

Easy and delicious. I only used cremini mushrooms. Ran out of shallots, so I used a regular yellow onion and substituted thyme for tarragon. Will make it again!

This soup is quite good but seems to need a tiny bit of something to take it over the top. Did have to use dried shiitakes and used the rehydrating liquid to add to the soup
