Description
Dairy-free but still creamy broccoli soup. The blended cauliflower substitutes milk but you may still add a half cup of whole milk after you have blended all the vegetables for extra creamy-ness.

- 1 onion (medium)
- 1 celery rib
- 2 cloves garlic
- 1 tsp. thyme
- 1 head broccoli
- 1/2 carrot
- 1/4 cauliflower head
- 2 cups water
- 4 cups chicken stock
- salt (to taste)
- 1 Tbsp. olive oil

Directions
- Heat olive oil in a medium pot. Roughly chop onion, carrot, and celery and sauté over medium high heat until softened.
- While cooking the onion, carrot and celery mixture, halve the garlic cloves and roughly cut up the broccoli and cauliflower
- When the onions and celery are translucent and the carrots are softened, add garlic and thyme. Let cook for about a minute until fragrant.
