Description

Dairy-free but still creamy broccoli soup. The blended cauliflower substitutes milk but you may still add a half cup of whole milk after you have blended all the vegetables for extra creamy-ness.

  • 1 onion (medium)
  • 1 celery rib
  • 2 cloves garlic
  • 1 teaspoon thyme
  • 1 head broccoli
  • 1/2 carrot
  • 1/4 cauliflower head
  • 2 cups water
  • 4 cups chicken stock
  • salt (to taste)
  • 1 tablespoon olive oil

    Directions

    1. Heat olive oil in a medium pot. Roughly chop onion, carrot, and celery and sauté over medium high heat until softened.
    2. While cooking the onion, carrot and celery mixture, halve the garlic cloves and roughly cut up the broccoli and cauliflower
    3. When the onions and celery are translucent and the carrots are softened, add garlic and thyme. Let cook for about a minute until fragrant.
