A few notes that I googled and applied here:
- Bring the butter, cream cheese and eggs to room temp first.
- At the mixer, don’t rush! Mix the ingredients nice and slow then fast for a minutes. Back and forth like this with every step. I spent a good 30 minutes by the mixer. Also, add the flour slowly too, don’t dump all in one shot.
- Added the zest of half a lemon for an extra kick
- Double up the vanilla extract
- I could’ve used 3-1/2 cups instead of 3
- Added 2 tsb baking powder as recipes without this are taking a risk. Your cake might not rise well as happened to me in the past
- Started cooking in cold oven. Apparently it’s better for this recipe as read elsewhere
Overall a very easy, simple and yummy recipe.
Add the icing sugar on the slices too to taste.
