- 1 pkg. colby (Monterey)
- 1 block pepper jack cheese (cut in pieces for easier melting)
- 2 peppers (sliced jalapenos)

Easy, Quick & Delicious! In fact, my men said they never want regular nachos again 😋
Note: Used 2 lbs. of Crawfish, substituted a can of Rotel Tomatoes for the tomato sauce, and used 8 oz. block of pepper jack cheese & 8 oz. of Velveta in the sauce. Decreased the black pepper & red pepper to 1/2 tsp. Used grated Colby Jack sprinkled over top. Great with Jalapeños on top as well.
