    The recipe as it’s written is underseasoned. Also, cook the potatoes FIRST before adding onion or they’ll burn. Season the potatoes (salt and pepper) when they go in, and again when you add the onion. I used 3 cloves of garlic and a fresh tomato (chopped). I also added cayenne and crushed red pepper. Next time would add a crumbly cheese on top!

    Had some fresh range farm eggs and gave it a shot. Added mushrooms and spinach because it was for dinner. Had a loaf of good sourdough it was fantastic! Took a bit longer for the eggs to poach but I was patient and they turned out great thanks for a great idea

    Omg - caramelized onions and potatoes with just that touch of tomatoes - the crashed eggs cooked perfectly... so. SO. GOOD!! (Threw a little grated Asiago on top, because I must tinker!!) Totallly satisfying and delicious!!
    Pretty filling. I added cheese on top. Tastes great.
