- 1 1/2 qt. cranberry juice
- 6 floz cranberry vodka
- 3 Tbsp. salt
- 9 lb. rack of pork (frenched)
- water (as needed)
- 4 oz. dried cranberries
- 8 oz. pecans (toasted, ground)
- 8 oz. bread crumbs (palin)
- 1 1/2 floz clarified butter
- 2 oz. thyme (fresh leaves, chopped)
- 1 1/2 floz clarified butter

Directions
- 1. Combine juice, vodka and salt, mix well to combine
- 2. Cover pork with cranberry liquid and Refrigerate overnight
- 3. Remove from liquid and pat dry, set aside
